I baked Banana Muffin today. YUMMY!! It's my 2nd time to make it. The first time I added almond extract according to the recipe. The almond flavor is too strong, so banana flavor is covered. This time I didn't add almond extract. The muffins taste good. I love it.
Recipe of Banana Muffins (Copied from I'm Just Here For More Food. Alton Brown.) (12 standard muffins)
The Wet Works 1 Overripe bananas - 340g (3-4 count) Sugar - 210g
The Dry Goods All-purpose flour - 220g Oat flour - 35g Baking soda - 1 teaspoon Salt - 1 teaspoon
The Wet Works 2 Unsalted butter - 113g (1 stick) (melted and cooled) Eggs - 100g (2 large)
Steps 1. Preheat the oven to 350F/175C 2. Prepare a standard 12-hole muffin tin. 3. Place the bananas and sugar in a large mixing bowl and mash them together with a potato masher until smooth (obviously this is impossible with all but the most overripe of bananas). 4. Combine the Wet Works 1 and then the Wet Works 2 in separate bowls, then combine together before adding the Web Works to the Dry Goods (mix just until batter comes together). 5. Pour the batter into the muffin tin and bake for 30 minutes, until a toothpick inserted into the bottom of a muffin comes out more or less clean. 6. Remove the muffins immediately to a cooling rack.
Last week, I was angry with the postal service (USPS). The reason is pretty long. Please be patient. Recently, I mailed an international package to Hong Kong. Each package has its own tracking number so that people can check the statue of the package online. When I tracked my package online, I found that the info of another package was shown. Then, I went to a post office to find out why. The officer said he couldn't help me and asked me to call the main office for help. I called the number, and the telephone system kept asking me the tracking number which is incorrect. As a result, I couldn't go through the system, so I went to the post office for help again. The same officer asked me to call another number. I did and talked with another man this time. The man said he couldn't help me and asked me to call the first number again. I told him that I'd a wrong tracking number so wasn't able to go through the telephone system. Then, he told me to hit zero continually no matter what the system said. Finally, I'm able to speak with the right person (a lady). She said that my package probably was on the way to HK. Wrong information was shown because it isn't a requirement to scan the tracking number when the post office delivers the package. That means the tracking number doesn't follow to the package. (Is it a joke? Why do you give me a tracking number at the beginning. I really want to ask her what the purpose of tracking number is) Anyway, she recorded the package's details for investigation. That means right now, I can't do anything but wait.
PS 1: Hope that the package arrives HK safely.
PS 2: I'll choose UPS next time. So far I haven't had any problem with UPS.
PS 3: I really hate telephone systems. I often spend lots of time on getting the right information or reaching the right person.
PS 4: I learn that if I've problems with the telephone system next time, I just hit whatever keys no matter what the system says. I believe it's the fastest way to speak with a person. (Good that I learn something in this issue =))
